The Beauty of One-Pan Cooking

Weeknight cooking doesn't have to mean either ordering takeaway or spending an hour in the kitchen. One-pan meals hit the sweet spot — real, satisfying food with almost no washing up. These five recipes are reliable, adaptable, and genuinely easy.

1. Garlic Butter Shrimp with Cherry Tomatoes

This one comes together in under 15 minutes. Heat butter in a wide pan, sauté minced garlic until fragrant, then add shrimp and halved cherry tomatoes. Season with salt, pepper, and a squeeze of lemon. Serve over rice or with crusty bread to soak up the sauce. The tomatoes burst into a light, sweet sauce that makes it feel far fancier than the effort involved.

Tip: Frozen shrimp work perfectly here — just thaw them first.

2. Sheet Pan Chicken Thighs with Vegetables

Toss chicken thighs with olive oil, paprika, garlic powder, salt, and pepper. Arrange on a sheet pan with whatever vegetables you have — potatoes, zucchini, capsicum, and red onion all work brilliantly. Roast at 200°C for about 35–40 minutes. Everything cooks at the same time with zero attention required.

Tip: Cut your vegetables into similar sizes so they cook evenly.

3. Coconut Milk Dhal

This is pure comfort food and incredibly forgiving. Sauté diced onion and garlic in a deep pan, add curry powder or paste, then pour in red lentils, a can of coconut milk, and vegetable stock. Simmer for 20–25 minutes, stirring occasionally, until the lentils are soft and the sauce has thickened. Serve with rice or flatbread.

  • Add spinach in the last 5 minutes for extra greens
  • A squeeze of lime at the end brightens everything
  • It tastes even better the next day

4. Chorizo and White Bean Skillet

Slice chorizo into coins and fry in a pan — it releases its own oil, so no extra needed. Add drained white beans (cannellini work well), a handful of cherry tomatoes, and some smoked paprika. Let it all bubble together for 10 minutes. Finish with fresh parsley if you have it. It's smoky, hearty, and ready before you've even set the table.

5. Teriyaki Salmon with Bok Choy

Mix soy sauce, honey, and a splash of rice vinegar for a simple teriyaki glaze. Sear salmon fillets in an oven-safe pan, pour over the glaze, then tuck bok choy halves around the salmon. Transfer to the oven at 190°C for 10–12 minutes. The salmon caramelises beautifully and the bok choy steams gently in the sauce.
